Pineapple Rum

Pineapple and rum are a natural Queensland combination. It is a 40% rum with a natural pineapple character and minimal sweetness, allowing the fruit to complement the rum rather than overpower it.
It is not a sweet liqueur. The pineapple comes through naturally, while the rum remains at the centre. For a fuller, more pronounced pineapple flavour, mix it with something sweet, such as ginger beer.
How It’s Made
We start with locally sourced molasses, ferment it slowly and distil the rum at our Burleigh Heads distillery. The spirit is matured in ex-bourbon barrels in Queensland’s warm coastal climate before being infused with real Queensland pineapple skins and fresh vanilla pods.
There are no syrups, sugars or artificial flavours, just properly made rum and real ingredients.
Tasting Notes
Subtle, fresh pineapple and vanilla on the nose, with a hint of toasted caramel. The palate brings together natural tropical fruit, smooth rum warmth and gentle spice.
The finish is clean and balanced, with a subtle pineapple note that lingers without overpowering the aged rum. Its minimal sweetness keeps it fresh and versatile
How We Drink It
Enjoy it over ice with a squeeze of fresh lime, or mix it with dry Ale or ginger beer. The sweetness of a mixer helps the pineapple flavour shine through more clearly while complementing the rum’s warmth.
For a simple Tropical Dark ’n’ Stormy, fill a glass with ice and add:

45ml Capricorn Pineapple Rum

120ml ginger beer

A generous squeeze of fresh lime
Stir gently and enjoy.
For a Pina Colada, blend:

60ml Capricorn Pineapple Rum

60ml cream of coconut

120ml pineapple juice
-
1 cup frozen pineapple chunks or ice
Blend on high speed for 30–45 seconds, until smooth. Pour into a tall glass and garnish with a Cocktail Candy pineapple wedge. Serve immediately.

Every batch is distilled, matured and bottled by hand at our Burleigh Heads distillery. We work in small batches, use real, local ingredients and taste every run before it leaves the distillery.
