Your Capricorn Day Out starts with a warm welcome and a handcrafted cocktail (essential). From there, we’ll take you on an educational tour of our distillery, led by one of our expert distillers. You’ll see every step of the process, from the gleaming copper stills to the enchanting aging cellars. It’s a behind-the-scenes look at how we create our delicious rum and gin right here on the Gold Coast in beautiful Burleigh Heads. Lots to see, touch and smell!
GUIDED TASTING SESSION
The highlight of the tour is the guided tasting session. Here, you’ll get to sample our full range of spirits and truly appreciate the craftsmanship that goes into each bottle. Our knowledgeable distillers will share insights into the subtle nuances and characteristics of each spirit, making the tasting session both enjoyable and educational. Whether you’re a rum or gin lover, there’s something for everyone to enjoy.

ABOUT CAPRICORN DISTILLING
Founded in 2016, Capricorn Distilling Co. started as a backyard passion project. Our founder, Warren, began distilling with friends using an 80-litre still from Spain. After releasing his first batch of premium rum, the venture quickly grew. By 2017, the team expanded with Simon and Carla joining from Melbourne, and our journey truly began.
Initially operating at the iconic Saleyards Hotel in Rockhampton, we crafted Capricorn Spiced Rum and Billy Goats Gin, named after the famous goat racing in the area. The distillery quickly gained a reputation for producing high-quality spirits, leading to our move to Burleigh Heads in 2021. This new location allowed us to expand our operations, offering a picturesque cellar door, bar, cocktails, free tastings, and tours.

OUR SUSTAINABILITY
Sustainability is a crucial aspect of our distillation process. Our team recognises the environmental impact of our industry, which is why we prioritise sustainability throughout our distillation and production process. We remain dedicated to learning and adopting new methods to enhance the efficiency of our distillery and minimise our carbon footprint. We cherish the tropical climate and way of life in Queensland and strive to preserve it for future generations by making sustainability a priority.
OUR STILLS
Our copper pot still, "Burleigh," is a traditional British-style single retort still that crafts one batch at a time. This provides greater control over the flavours of our spirits, including some of our gins and exotic rums. Our bespoke still, "Rocky," made in NSW, is inspired by Jamaican and Bajan styles and is the only one of its kind in Australia. Specifically designed for rum-making, it produces rich and heavy flavours that cannot be found in other spirits.
