Our newest addition to the Pure Single collection marks a defining moment in our distilling journey. This release was one of the very first spirit runs produced on our double retort copper pot still in Rockhampton back in 2021 — the beginning of a new chapter for Capricorn Distilling Co.
After distillation, the spirit was transported to our Burleigh distillery, where it matured patiently for five full years in ex-bourbon oak barrels. Queensland’s coastal climate has shaped and intensified its character, allowing deep interaction between spirit and wood.
Bottled at 45% ABV, Pure Single #5 is rich and full across the palate, with a generous mouthfeel and layered oak influence. Expect notes of toasted charred oak, slight vanilla and warm baking spice, carried through to a long, warming finish. The profile is rich, rounded and full bodied.
There are no added sugars, sweeteners, colourings or artificial flavours — just honest rum, shaped by time and oak.
