Coffee Rum

Capricorn Coffee Rum is a full-strength, barrel-aged rum with the dark, roasted character of an espresso shot. It is rich, with hints of coffee, dark chocolate and oak, but without the heavy sweetness of a typical coffee liqueur.
This is a proper 40% rum first, with coffee adding depth and flavour.
How It’s Made
We start with locally sourced molasses, ferment it slowly and distil the rum at our Burleigh Heads distillery. It is then matured for years in our ex-bourbon barrels in Queensland’s warm coastal climate.
The aged rum is infused with locally roasted coffee beans from our next-door neighbours, The Coffee Roasters. Along with vanilla, the coffee creates a deep, roasted character reminiscent of an espresso shot while allowing the rum and oak to remain at the centre.
Tasting Notes
Rich espresso and roasted coffee lead the nose, followed by dark chocolate, vanilla and toasted oak.
The palate is full-bodied, with notes of molasses. coffee, warm vanilla and oak. The finish is long and warming, with lingering espresso and dark chocolate and only minimal sweetness.

Every batch is distilled, infused and bottled by hand at our Burleigh Heads distillery. We work in small batches, use real ingredients and taste every run before it leaves the distillery.
No shortcuts and no overpowering sweetness, just properly made Queensland rum with real coffee character.
