This premium rum is made from locally sourced molasses, fermented to perfection, and aged in the tropical climate of Queensland using ex-bourbon barrels. The rum is then infused with cold brew coffee that we get from our neighbours in Burleigh Heads, adding a rich, aromatic layer to its flavour profile.

Everyone’s favourite

The Espresso Rumtini is our take on the classic Espresso Martini, adding a rich and bold twist with Capricorn Coffee Rum. This cocktail combines the robust notes of the coffee rum with the smooth, creamy taste of cold brew coffee and a touch of sweetness from sugar syrup, creating a perfectly balanced drink.

Ingredients:

  • Ice
  • 45ml Capricorn Coffee Rum
  • 30ml Capricorn Rum Liqueur
  • 45ml Cold brew coffee
  • 20ml Sugar syrup
  • Coffee beans for garnish

Method:

  1. Fill a shaker with ice.
  2. Add 45ml of Capricorn Coffee Rum, 30ml of Capricorn Rum Liqueur, 45ml of cold brew coffee, and 20ml of sugar syrup.
  3. Shake well until the mixture is chilled.
  4. Strain into a chilled martini glass.
  5. Garnish with coffee beans.

The Coffee Rum Old Fashioned is a modern twist on a classic cocktail, featuring the robust flavours of Capricorn Coffee Rum. This drink combines the rich, aromatic notes of the coffee rum with the traditional elements of an Old Fashioned, resulting in a smooth, flavourful cocktail.

Ingredients:

  • 50ml Capricorn Coffee Rum
  • 1 sugar cube
  • 2 dashes aromatic bitters
  • Orange peel for garnish
  • Optional - cherry 
  • Ice

Method:

  1. Place the sugar cube in an Old Fashioned glass.
  2. Add 2 dashes of aromatic bitters and a splash of water.
  3. Muddle the sugar cube until it dissolves.
  4. Add ice to the glass.
  5. Pour 50ml of Capricorn Coffee Rum over the ice.
  6. Stir well to combine.
  7. Optional: add a cherry
  8. Garnish with an orange peel

Ingredients:

  • 15ml Capricorn Coffee Rum
  • 50ml Pineapple juice
  • 30ml Fresh lime juice
  • 10ml Falernum
  • 30ml Spiced rum
  • 25ml Aperol
  • Garnish: Pineapple leaf and flower

Method:

  1. Fill a shaker with ice.
  2. Add 15ml of Capricorn Coffee Rum, 50ml of pineapple juice, 30ml of fresh lime juice, 10ml of falernum, 30ml of spiced rum, and 25ml of Aperol.
  3. Shake well until the mixture is well chilled.
  4. Strain the mixture into a glass filled with ice.
  5. Garnish with a pineapple leaf and a flower.
