We are so proud to release our first aged straight rum, we wanted to craft the perfect expression of our sun- kissed home. Itβs fermented for 11 days over summer, then transferred to our one-of-a-kind copper pot still.
For three-and-a-half years, itβs lovingly matured in ex shiraz American Oak barrels from the Barossa Valley. After that, itβs finished in ex-bourbon barrels for another year and a half.
In the glass, you can really taste the whole journey. Itβs bold and full of oak, but with plenty of delicate floral notes. The rum drifts through the palate with floral and caramel flavours, dripping with the finest local molasses. All rounded off by warm spices and treacle that linger on the tongue.
There are no added sugars, sweeteners, caramels, colourings or artificial flavours.
Molasses: Millaquin Sugar Mill, QLD
Water: Fitzroy River, QLD
Fermented: 11 days in the tropical heat in Rockhampton
Distillation: Double distilled in our 1000L single retort pot still. For the stripping run we utilsed the retort and for the spirit run we bypassed the retort.
Date: Spirit run distillation occurred on the 22/3/2017
Barrels: Aged for 3.5 years in an ex shiraz french oak barrel (300L) from the Barossa Valley which had been shaved out and re charred by Howies Barrels in Brisbane. Then transferred to an ex-bourbon barrel for approximately 1.5 year (200L).
